Garlic Green Beans with Pine Nuts

Ingredients:

1 lb. fresh green beans, washed and trimmed
1 tbsp. olive oil
3 shallots, sliced
3 cloves garlic, chopped
1 jar (1 ¾ oz.) pine nuts (pignoli) 

Freshly grated Parmesan cheese to taste

 
Instructions:

In a saucepan, cook beans in salted boiling water for 3 to 4 minutes; immediately transfer to ice water to cool; drain. 

Meanwhile, in a large skillet, heat olive oil over medium heat.  Add sliced shallots; cook until shallots are tender and caramelized, about 5 to 7 minutes.

Add garlic and pine nuts to skillet; sauté until pine nuts are lightly toasted, about 3 minutes.

Stir in green beans; cook until heated through, about 3 minutes.  Serve topped with freshly grated Parmesan cheese.  Enjoy!
