Roasted Turkey Breast with Herbed Butter

Ingredients:

Herbed Lemon Butter:

1/2 c. butter, softened
1 tsp. freshly squeezed lemon juice
1/2 c. fresh parsley, chopped
1/4 c. fresh chives, snipped
1/2 tsp. dried leaf basil
1/2 tsp. dried leaf marjoram
 
Mix all ingredients well, either by hand or in a small food processor.
 

Turkey Breast:

1 (7 to 8 lb.) bone-in turkey breast
1 yellow onion, quartered
1 bay leaf
1/4 c. olive oil
Salt and freshly ground black pepper
Optional:  Layer of very thick cut slices of carrots, onions, potatoes
 
Instructions:

Preheat oven to 325 degrees.  Rinse turkey well, inside and out; pat dry with paper towel.  Using your hands or a thin rubber spatula, loosen skin from breast meat.  Spread some of the herbed butter between skin and meat; season turkey inside and out with salt and pepper.  Place the onion and whole bay leaf inside the turkey cavity.  Rub olive oil and remaining herbed butter over the turkey skin. 

Place bird onto a layer of vegetables or simply place on a v-rack in shallow roasting pan.  Cover securely with foil tent, and roast until meat thermometer registers 170 degrees when inserted into the thickest part of the breast, not touching the bone.  This should take between 2 1/4 to 3 1/4 hours to roast.  Allow turkey to rest, covered for at least 20 minutes prior to serving.  Remove seasonings from cavity.  Garnish, carve, and serve!
 
Kitchen Kimberley's Tip:
Remember, meat roasting times are approximate, since the weight of the turkey will vary.  For best results, meat temperature is the key!  This turkey is gorgeous when served on a bed of fresh herbs and garnished with lemon wedges.  Enjoy!
