Snickerdoodles II
Recipe from Angel Delights Cookbook

Ingredients:

1 box yellow cake mix
2 eggs
1 stick butter, softened
Sugar and cinnamon, mixed to taste
 
Instructions:

Mix cake, eggs and butter in a bowl.  Shape into 1-inch balls.  Roll in sugar and cinnamon.  Put on cookie sheet 2 inches apart.  Flatten with a glass dipped in sugar mixture.  Bake at 375 for 8 to 10 minutes. 

Kitchen Kimberley's Tips:
 
  • The best way to mix this dough is by hand, literally!  Use your hands to blend until the dry ingredients are moistened.  The warmth of your hands helps to melt the butter and blend everything evenly. 
  • Allow these cookies to cool on the baking sheet for 2 minutes before removing to a wire rack to cool completely.  Store in an airtight container.
