Christmas Rice
Recipe from the family favorites file!

Ingredients:

1 c. long-grain rice
2 cans (10 1/2 oz. each) condensed chicken with rice soup, undiluted
1 1/4 c. water
1 tsp. salt
2 large green bell peppers, chopped
1 large onion, chopped
1/2 stick butter, cut into pieces
1 small jar pimientos, with liquid
4 oz. sliced mushrooms, fresh or canned
 
Instructions:

Preheat oven to 350 degrees.  In a large bowl, mix all ingredients together.  Pour into a buttered 2-quart casserole dish; stir several times.  Bake, uncovered, for 45 minutes to 1 hour, stirring several times (about every 15 minutes) while baking.  Enjoy!

Yield:  6 to 8 servings
 
Kitchen Kimberley's Tip:

Add a handful of chopped fresh parsley for more color and flavor.  Or, use a mixture of red, green and yellow bell peppers.
