Note: A food processor works best for preparation of this recipe, but a stand mixer, or hand mixer could also be used.
In a large bowl, combine cream cheese with chili seasoning mix. Add shredded cheese and mix well. Transfer mixture to a large piece of plastic wrap; mold and wrap in a round ball-shape. Transfer to a plastic bag, and chill for about 1 hour, or until firm. Roll cheese ball in chopped parsley; serve immediately with your favorite crackers or corn chips. Enjoy!
Kitchen Kimberley’s Tip:
This recipe can easily be doubled, for 2 Chili Cheese Balls. Serve one now, and freeze one to enjoy later! These freeze well, without the parsley, of course. When you're ready to serve, simply thaw, and roll in chopped parsley, or nuts, if you prefer.
