Salmon Croquettes or Salmon Patties?  Let’s just be casual and call them Patties, shall we?!

Scrumptious Salmon Patties

Perhaps if you’re serving them at a fancy-shmancy dinner event you can call them “Croquettes” and impress people with your Southern-ish French accent.  You have fancy-shmancy dinner events in your life, right?

Yeah, me neither.  I can do a pretty good Texas-based French accent, though!  Oui!

No matter what you call them, after one bite of these babies you’ll definitely be calling them ‘scrumptious’, in any language!

Do you recall having these when you were growing up?  I sure do!  My Mom made these frequently, but this is not her recipe.  Nope — I updated it and made it healthier, and even more flavorful!

It’s what I do for a living, you know…I play with my food until I get it right.

Since my hubby and I have been eating ‘super-healthy-17-Day-Diet-meets-borderline-Paleo’ and losing ridiculous amounts of weight, {between the two of us, it’s like 30-ish pounds, wow!} we have incorporated new foods to keep things interesting and to avoid getting stuck in an eating rut.

Disclaimer — I have never met a food I didn’t like (okay, I am not a sushi fan, sorry!), but my sweet hubby isn’t really a fan of any fish or seafood unless it is battered and deep fried.

While I can’t say I blame him, battered and deep fried anything is just not a part of our new, healthy lifestyle.  So now we’re trying alternatives, like grilled or baked fish, and so far he’s a fan!!  We even ate these Scrumptious Salmon Patties leftover for lunch the next day, and he liked them!

You must know that I rejoice in small victories like these!  I did a few cartwheels when he wasn’t looking, haha!

Scrumptious Salmon Patties

Canned salmon can be found at any grocery store, but my favorite is from a company called Wild Planet.  (They have no idea I’m saying this…I randomly tried this brand on my own and loved it!)

I ordered it from Amazon Prime Pantry, but you might be able to find it at specialty stores like Sprouts or Central Market.  Either way, just use your favorite canned salmon and all will be well.

Scrumptious Salmon Patties

Nutrition per portion

Ingredients
  • 1 (6 ounce) can wild salmon
  • 1/4 cup finely chopped celery
  • 2 tablespoons freshly chopped parsley
  • 2 tablespoons minced red bell pepper
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon seasoned salt
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1 teaspoon fresh lemon juice
  • 2/3 cup wheat germ, divided use
Method
Spread the foodie love!
  1.  Mix all ingredients together in a medium bowl.  Cover and chill for 30 minutes.
  2. Form mixture into golf-ball sized balls, and roll in 1/3 cup wheat germ to coat.
  3. Heat oil in a large skillet over medium heat. Flatten the balls slightly, then cook for about 10 minutes, turning as needed until golden brown.
